Ingredients:
- 1 cup butter or margarine
- 2 cups rolled oats
- 1 cup packed brown sugar
- 2/3 cup all-purpose flour
- 4 tablespoons cream
- 6 tablespoons cream
- 1 cup semisweet chocolate chips
- 2 tablespoons brandy
Instructions:
- Melt the butter, remove from the heat and stir in the oats, brown sugar, flour and 4 tablespoons of the cream. This is the cookie dough. Stir often as using and keep it well mixed.
- Drop the dough in ONE teaspoon portions, placing only six per 12X15 baking sheet lined with parchment.
- Bake at 350° for 7-9 minutes. Remove from the oven and let stand until cookies are firm, about 3 minutes. Place on racks to cool.
- For filling stir remaining cream, chips and brandy over low heat until melted. This should be a bit thickened to be easy to work with. Now you can either place the chocolate on the bottom of one and sandwich them together…………or place the chocolate in a plastic zip lock and drizzle over the tops of all the cookies.
