Ingredients:
- 1 large bunch broccoli
- ¼ teaspoon salt
- 1 16 ounce container cottage cheese
- 2 egg whites
- 1/3 cup Parmesan
- 3 tablespoons flour
- ½ teaspoon Italian herb seasoning
- ½ of a 15 ounce jar of spaghetti sauce
- 4 ounces mozzarella, shredded
Instructions:
- Slice broccoli lengthwise into ¼ inch slices. In a skillet over medium heat, heat two cups water and salt to boiling, add broccoli and bring back to boiling. Reduce heat to low, cover and simmer 5 minutes and drain.
- Preheat oven to 375°. In a food processor, blend cottage cheese, eggs whites, Parmesan, flour and Italian herb seasoning until smooth.
- Oil a 12 by 8 baking dish. Arrange half of the broccoli in a single layer, top with cottage cheese mixture, then layer with remaining broccoli. Spoon spaghetti sauce over broccoli and finish with mozzarella.
- Bake, uncovered, 35 minutes or until hot and bubbly in the center. Let stand 5 minutes for easier serving.
