Ingredients:
- 2 medium red onions
- 2 tablespoons olive oil
- 1 tablespoon butter
- 6 eggs
- ¾ cup whole milk
- 1 tablespoon grated Parmesan
- 1 tablespoon fresh ground parsley
- 1 link pork chorizo, sautéed
- Salt and pepper to taste
Instructions:
- Peel the onions and slice into ½ inch thick rounds.
- Heat the butter and olive oil in a 10 inch skillet over medium-high heat. Add the onions and cook until they become golden. Shake the pan from time to time to cook evenly.
- Lightly beat the eggs, then pour in the milk, cheese, parsley and crumbled chorizo. Season with salt and pepper.
- When the onions are cooked, turn the heat down to medium. Pour the mixture over the cooked onions. Stir gently to incorporate, then cook for to 8 minutes until the bottom is set.
- To finish cooking, you may set the pan under the broiler until the top is just done. The eggs should not cook dry.
