Chicken Pilau

Ingredients:

  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons oil
  • 1 whole chicken breast, about 10 ounces cut into cubes
  • 1 cup rice
  • 1/3 cup raisins
  • 1 teaspoon salt
  • 1 teaspoon ginger
  • ¼ teaspoon pepper
  • 1 17 ounce can apricot halves
  • 2 tablespoons soy sauce
  • 2 tablespoons Sherry
  • Chicken Broth

Instructions:

  1. Sauté onions and garlic in oil until tender but not brown.  Add chicken and cook 2 minutes longer.  Stir in rice, raisins, salt, ginger and pepper.
  2. Drain apricot halves and continue syrup with soy sauce and Sherry, adding enough broth to make 2 cups.
  3. Stir into rice mixture.  Bring to a boil, stirring once.  Reduce heat, cover and simmer 25minutes or until rice is tender and liquid is absorbed.  Add apricot halves and heat thoroughly.

Comments: An Arabic adventure.  Serve with a hearty spinach salad and crusty bread!
