Ingredients:
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 tablespoons oil
- 1 whole chicken breast, about 10 ounces cut into cubes
- 1 cup rice
- 1/3 cup raisins
- 1 teaspoon salt
- 1 teaspoon ginger
- ¼ teaspoon pepper
- 1 17 ounce can apricot halves
- 2 tablespoons soy sauce
- 2 tablespoons Sherry
- Chicken Broth
Instructions:
- Sauté onions and garlic in oil until tender but not brown. Add chicken and cook 2 minutes longer. Stir in rice, raisins, salt, ginger and pepper.
- Drain apricot halves and continue syrup with soy sauce and Sherry, adding enough broth to make 2 cups.
- Stir into rice mixture. Bring to a boil, stirring once. Reduce heat, cover and simmer 25minutes or until rice is tender and liquid is absorbed. Add apricot halves and heat thoroughly.
Comments: An Arabic adventure. Serve with a hearty spinach salad and crusty bread!
