- ¼ cup minced parsley

DRESSING
- 1 clove garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- ½ teaspoon each cumin and paprika
- ¼ teaspoon each ground red pepper and salt
- Freshly ground pepper to taste
