Ingredients:
- 1 pound slab flat rice noodles, cut ½ inch thick
- 1 pound Chinese barbecued pork, sliced ¼ inch thick
- 1 bunch green onions, sliced diagonally
- ½ cup cilantro leaves
- 4 cups mixed greens
- 1/3 cup oyster sauce
- 1 ½ tablespoons lemon juice
- 1 teaspoon sesame oil
Instructions:
- Place noodles in a boiling pot of water and let soak until soft. Drain and rinse noodles and place in a large bowl.
- Mix oyster sauce, lemon juice and sesame oil and set aside.
- Mix remaining ingredients. Place a ‘nest’ of noodles on plate, top with meat, lettuce mixture and drizzle dressing.
