Ingredients:
- 2 ripe large bananas
- 1 cup brown sugar
- ½ cup butter or margarine
- 2 eggs
- ¾ cup sour cream
- ½ cup light molasses
- 1 teaspoon vanilla
- 2 ¼ cup flour
- 2 teaspoons chopped crystallized ginger
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 1 cup chopped pecans.
Instructions:
- Preheat oven to 350 degrees and grease a 9 cup fluted tube pan or 2 (8 ½ by 4 ½ inch) loaf pans.
- Puree one banana in the blender.
- Cream ½ cup brown sugar and butter together. Beat in pureed banana, eggs, sour cream molasses and vanilla.
- Combine flour, ginger, baking soda, baking powder, salt and cinnamon. Beat into banana mixture.
- Sprinkle ½ cup pecans in bottom of the pan. Spread half of the batter and sprinkle with remaining ½ cup brown sugar and ½ cup pecans.
- Slice remaining banana over top and spread remaining batter over filling.
- Bake at 350 degrees for 40 to 50 minutes. Cool slightly before inverting onto a wire rack.
