Ingredients:
- 2 ounces goat cheese
- 2 tablespoons tarragon vinegar
- 1 tablespoon finely chopped basil
- 1 minced garlic clove
- 1 or 2 ripe tomatoes, coarsely chopped
- ½ cup olive oil
- Salt and pepper to taste
Instructions:
- Pulse the goat cheese, vinegar, basil and garlic in a blender to combine
- Add the tomato and puree.
- With the machine running, gradually add the oil until the mixture is smooth. Season with salt and pepper.
- Store in a covered gar in the refrigerator for up to two weeks. Shake well before using.
