Herbed Pasta Dough

| Servings: ¾ to 1 lb. of pasta dough

Ingredients

  • 2 ¼ cup all-purpose flour
  • 3 eggs
  • ¾ tsp. salt
  • 1 Tbsp. olive oil
  • 1 Tbsp. water or milk (lukewarm)
  • 2 Tbsp. filly chopped fresh parsley
  • 1 Tbsp. finely chopped fresh marjoram
  • 2 Tbsp. finely chopped fresh basil
  • 1 Tbsp. finely chopped fresh thyme

Instructions

  1. Place the fresh herbs in a food processor and pulse until finely chopped.
  2. Add the flour and the salt and mix.
  3. Add the olive oil and pulse in.
  4. Add the eggs, one by one with the motor running.
  5. Add the water or milk if necessary to form a smooth ball.
  6. Turn the dough onto a lightly floured board and knead slightly.
  7. Wrap in saran wrap and let rest 30 minutes.
  8. Roll out and cut as desired.
