Ingredients
- ½ hard crusted Italian loaf
- 2 dozen vine ripened cherry tomatoes
- 1 cup pitted Italian green olives and black olives
- 4 stalks celery, chopped
- 1 small red onion, sliced
- 1 small bunch arugula
- ½ cup balsamic vinegar
- 1/3 cup olive oil
- Salt and pepper
- 2 cloves garlic, minced
- Shredded basil for garnish
Instructions
- Slice bread into ¾ inch slices. Brown in oven on both sides.
- Brush with olive oil and but into cubes and set aside.
- Combine chopped celery, olives, red onion, tomato and arrugula with minced garlic.
- Toss all ingredients with bread and vinegar and oil. Salt and pepper to taste.
