Ingredients
- ½ cup olive oil
- 1/3 cup balsamic vinegar
- 1 medium chopped onion
- 6 minced garlic cloves
- 1 large chopped tomato
- ¼ teaspoon dried red pepper flakes
- 1 tablespoon chopped fresh oregano
- 2 tablespoons chopped fresh parsley
- Salt and pepper
- Large frying chicken cleaned and cut into serving pieces
Instructions
- Combine first section of ingredients and set aside half of marinade for sauce.
- Combine other half of ingredients with chicken and marinate in the refrigerator overnight.
- Grill basting the chicken with the marinade.
- Simmer reserved marinade in a saucepan until reduced to a thick sauce, about 10 minutes.
