Ingredients
- 6 boneless, skinless chicken thighs, cut into 1 inch cubes
- 2 tablespoons olive oil
- Salt and Pepper
- 2 leeks, cleaned and sliced ¼ inch
- 1 pound cremini mushrooms, cleaned and cut into fourths
- ½ cup dry white wine
- ½ cup cream
- 4 tablespoons truffle butter
- Faro or Angle Hair Pasta
Instructions
- Dry chicken cubes. Heat a large skillet, add 1 tablespoon oil, add chicken and season with salt and pepper. Saute until lightly browned on all sides. Remove and set aside.
- Add remaining oil and sliced leeks. Saute for about 3 minutes making sure to stir and not brown. Add dry white wine and reduce till only about 1 tablespoon of liquid is left.
- Add chopped mushrooms and brown. Add truffle butter, stir to melt and add cream. Add reserved chicken and heat but do NOT BOIL.
- Serve over pasta or faro!
Comments: Oh so yummy. A little of the truffle butter goes a long way. This is especially available around the holidays. 2010 Costco had a great value on it.
