Quinoa Salad with Black Beans, Corn, Avocado and Toasted Walnuts

Ingredients

  • 1 cup red Quinoa, cooked
  • 2 cups dried black beans, soaked and cooked
  • 2 cups roasted corn kernels
  • 1 bunch cilantro (Big Bunch), minced, stems included as they are GOOD for you
  • 2 pints grape tomatoes
  • 1/2 cup minced red onion, or to taste
  • 1/2 cup olive oil
  • Zest of 2-3 limes
  • Sea salt and pepper to taste
  • 1 cup toasted walnuts
  • 2 chopped avocados
  • Secret Ingredient:  Soy Vay Toasted Sesame Dressing

Instructions

  1. Cook quinoa according to directions.  I make it like rice, bring it to a boil, simmer until almost all the water is gone, cover and forget about it.
  2. Mix all the quinoa, black beans, onion, corn, cilantro, lime zest, tomatoes, black beans, olive oil.
  3. You can do all this ahead of time and stick it in the fridge.
  4. To serve, top your serving with some walnuts, avocado and dressing to your taste
