Ingredients
- 1 cup red Quinoa, cooked
- 2 cups dried black beans, soaked and cooked
- 2 cups roasted corn kernels
- 1 bunch cilantro (Big Bunch), minced, stems included as they are GOOD for you
- 2 pints grape tomatoes
- 1/2 cup minced red onion, or to taste
- 1/2 cup olive oil
- Zest of 2-3 limes
- Sea salt and pepper to taste
- 1 cup toasted walnuts
- 2 chopped avocados
- Secret Ingredient: Soy Vay Toasted Sesame Dressing
Instructions
- Cook quinoa according to directions. I make it like rice, bring it to a boil, simmer until almost all the water is gone, cover and forget about it.
- Mix all the quinoa, black beans, onion, corn, cilantro, lime zest, tomatoes, black beans, olive oil.
- You can do all this ahead of time and stick it in the fridge.
- To serve, top your serving with some walnuts, avocado and dressing to your taste
