Raisin Gems

Ingredients

  • 2 cups golden raisins
  • 1 cup raisin liquid (which raisins where cooked in) plus 2 teaspoons baking soda
  • ½ cup butter
  • 1 ½ cup sugar
  • 2 eggs
  • 3 cups flour
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • ½ teaspoon cloves
  • Pinch of salt

Instructions

1. Place raisins in saucepan and cover with 4 inches of water. Bring to boil and turn off and let sit for 45 minutes. Drain raisins and cool. Keep 1 cup of raisin liquid and add 2 teaspoons of baking soda.

2. Preheat oven to 350 degrees.

3. Sift flour, cinnamon, allspice, cloves and pinch of salt. Set aside.

4. Cream butter and sugar until it turns a pale yellow color. Add eggs one at a time and beat until fully incorporated.

5. Add half of liquid and half of sifted ingredients and blend. Add remaining liquid and dry ingredients and stir to blend.

6. Add cooled raisins and stir to incorporate. Scoop into muffin tins and bake at 350° for 25 to 30 minutes.

Comments: Great favorite from Flo. Very moist and flavorful.
