Ingredients
Salad
- 3 cups mixed greens
- 1 broiled chicken half breast
- ½ cup sliced black olives
- ½ cup sliced mushrooms
- 1 medium avocado, diced
- 1 medium tomato, diced
Hot Basil Dressing
- 1/4 cup butter
- ¼ cup red wine vinegar
- ½ cup olive oil
- ½ clove garlic, minced
- Salt and pepper
- 1 teaspoon chopped fresh basil
- 1 teaspoon chopped Italian parsley
- 1 teaspoon drained capers
Instructions
- Place salad greens on large plates. Slice chicken breast into ½ inch strips and place in center of the plate over the greens. Arrange olive, mushrooms, avocado and tomato on greens around chicken.
- Make dressing by melting butter in a saucepan. Add vinegar, oil, garlic, salt, pepper, basil, parsley and capers. Heat but do not boil. Serve on the side.
