Ingredients
- 3 cups unbleached flour
- 1 tablespoon baking powder
- 3 tablespoons sugar
- ½ tablespoon salt
- ½ cup unsalted butter, cold
- 1 cup dried currants
- 3 eggs
- 1 cup plus 1 tablespoon milk
Instructions
- Preheat oven to 450 degrees.
- Place flour, baking powder, sugar and salt in food processor and plus until mixed. Cut butter in pieces and add and plus as making pie crust.
- Put contents of food processor into a large bowl. Mix currants and 2 eggs and 1 cup milk together. Add to flour mixture and stir until blended.
- Roll out dough 1/3 inch thick. Cut into rounds and place 2 inches apart on baking sheet.
- Prepare an egg wash by beating together the remaining egg and 1 tablespoon milk.
- Bake 13 to 15 minutes or until scones are nicely puffed and tops are golden. Brush scones with egg wash.
