Ingredients
- 2 pounds green beans cleaned
- ¾ pound boneless skinless chicken thighs BBQ and diced
- 2 tablespoons sesame oil
- 1 ½ tablespoons sugar
- 2 tablespoons soy
- 1 tablespoon chopped hot chile
- ¼ cup lime juice (about 2 limes)
- ¼ cup rice wine vinegar
- 2 tablespoons chopped basil
- 2 tablespoons cilantro
- 2 tablespoons chopped mint
- 1 sweet red pepper, diced
- 1 pasilla pepper diced
- Salt and pepper to taste
- ½ cup coarsely chopped roasted peanuts
Instructions
- Cook green beans until JUST TENDER and blanch in ice water. Cool completely and chill.
- Combine chicken, sesame oil, sugar, soy, chile and lime juice and let stand for one hour.
- Add chicken mixture with green beans and toss well. Add vinegar, basil, cilantro, mint and peppers and toss. Season with salt and pepper to taste. Garnish with chopped peanuts.
Notes
- You can also use pork loin in this recipe.
