Ingredients
- 2 large garlic cloves
- 2 tablespoons cilantro
- 1/3 cup peanut butter
- ½ cup coconut milk
- 1 teaspoon sugar
- ½ teaspoon curry powder
- ¼ to ½ teaspoon chili paste
- One package Chinese noodles
- ½ cup chopped peanuts
- 2 green onions, slivered
Instructions
- In a food processor, mince garlic and cilantro. Add peanut butter, sugar, curry powder and chili paste. Process until combined
- Add coconut milk. Process until smooth.
- Too with warm Chinese noodles, green onions and peanuts.
Notes
- Great as a light lunch. The sauce keeps only 2 to 3 days in the fridge and is easily adapted into a peanut sate sauce.
