Ingredients
- ½ cup raisins
- ½ cup dark rum
- 1 ½ pints best quality vanilla ice cream
- 1 cup heavy cream
- ½ cup crumbled amaretti cookies
Instructions
- Mince the raisins and soak them in the rum for at least one hour.
- Transfer the ice cream to a large bowl and let it stand at room temperature until soft but not melted.
- Whip the cream in a metal bowl until it holds soft peaks. Fold raisin-rum mixture and cookie crumbs into the whipped cream.
- Gradually fold this mixture into the ice cream.
- Portion into large wine glasses and place in the freezer to firm up, at least one hour.
