Ingredients
- 1 tablespoon oil
- 1 yellow onion, diced
- 1 cup chicken stock
- 2 cans low fat coconut milk
- 4 tablespoons fish sauce
- 6 tablespoons green curry paste
- 4 sweet potatoes, peeled, cut into ½ inch cubes
- 16 ounces boneless pork, chicken etc cut into ½ inch cubes
- 4-6 ounces baby spinach.
Instructions
- Heat oil, add onion and saute until tender.
- Add stock, coconut milk and fish sauce and bring to a simmer.
- Add curry paste and stir until dissolved.
- Add sweet potato and simmer 10 minutes until almost tender.
- Add meat and simmer covered until cooked.
- Add spinach and toss. Serve with rice.
Notes
- A main dish in less then 30 minutes. I like to add whatever additional veggies I have, frozen peas, sliced celery in addition to the sweet potatoes and spinach. Also, try different protein sources, chicken, tofu, shrimp.
