Vietnamese Chicken Salad

Ingredients

  • 8 boneless chicken thighs
  • 1 pound Chinese Noodles
  • Peanut oil
  • ½ large Napa cabbage, sliced
  • ¼ small red cabbage, thinly sliced
  • 1 bunch cilantro, chopped

Peanut Dressing

  • ½ cup rice vinegar
  • ½ cup peanut butter
  • 2 tablespoons chopped ginger root
  • 2 tablespoons sesame oil
  • 2 tablespoons chopped green onions
  • 2 tablespoons sugar
  • ½ cup soy sauce
  • 2 tablespoons chopped cilantro
  • ½ cup whole peanuts

Instructions

  1. Grill chicken and slice into thin strips.
  2. Cook noodles according to package, drain and rinse in cold water. Toss with a small amount of peanut oil to prevent sticking.
  3. Combine dressing ingredients which make 1 ¾ cup dressing.
  4. Mix sliced cabbages and cilantro. Toss noodles with just enough Peanut Dressing to coat lightly.
  5. Place noodles on serving plates, top with cabbage mixture and place chicken slices over.
  6. Sprinkle with peanuts and serve the remaining dressing on the side.

Comments: Vary the vegetables based on what you have on hand. A handful of mint makes a wonderful addition.
