Ingredients:
- 1 three inch piece ginger
- 2 large cloves of garlic minced
- 1 teaspoons brown sugar
- ½ teaspoon ground cinnamon
- 1 pound skirt flank steak
- ¼ cup dry sherry
- 3 tablespoons soy
- 2 tablespoons olive oil
- Salt and pepper
- Roughly chopped cilantro leaves for garnish
- Rice
Instructions:
- Peel half the ginger; finely grate to make one tablespoons. Thinly slice remaining half. Scatter half grated and sliced ginger, garlic, brown sugar, cinnamon in a non-reactive baking dish. Cut steak against grain into three 6-inch pieces and place in the dish.
- Scatter with remaining dry ingredients. Pour sherry, soy and oil over the steak. Marinate, turning meat sever times for 30 minutes or refrigerate several hour.
- BBQ or broil in the over and serve over rice garnished with cilantro.
