Ingredients:
- 1 large yellow onion, sliced thin
- 2 ts. balsamic vinegar
- ¼ cup plus 2 ts. brown sugar
- 1 ½ cups ketchup
- ¼ cup olive oil
- ¼ cup cider vinegar
- 2 ts. lemon juice
- ¼ cup Worcestershire sauce
- 2 ts. dry mustard
- 1 ts. salt
- ¼ ts. cayenne pepper
- 3 chipotles in adobo or to taste, chopped
- ½ cup water
Instructions:
- Place onions in a heavy dry skillet and saute over medium until they begin to brown. Lower heat and add balsamic vinegar and 2 teaspoons of brown sugar, stirring until the onions are well coated. Allow to simmer for 10 minutes and remove from the heat.
- In a medium pan, whisk together remaining ingredients and cook over medium for 15 minutes or until the sauce thickens.
- Fine chop the caramelized onions and stir into barbecue sauce. Allow to cool.
- Marinate meat in the sauce 1 hour before grilling and continually baste.
Comments: A zippy BBQ sauce which is fired up with the smoky heat of chipotle chiles and sweetened with caramelized onions. This sauce is great on ribs, chicken and pork and a light brushing on salmon as it sears on the grill will take it from just fish to delish.
