Ingredients:
- 3 tablespoons canola oil
- 3 eggs, beaten
- 1 bunch scallions, roughly chopped
- 1 cup leftover pork, chicken or beef, diced
- 1 cup frozen peas and or corn, thawed (plus any leftover veggies)
- 4 cup cold cooked white or brown rice
- 4 tablespoons soy
- 2 tablespoons sesame oil
- ½ teaspoon chili paste
- Salt and pepper to taste
- 2-3 cloves garlic minced
Instructions:
- In a large skillet heat 1 tablespoon of the oil over medium.
- Add the eggs and scallions; cook until ALMOST set and set aside.
- Add the remainder of the oil, meat and veggies and oil. Increase heat slightly and add rice and cook until the rice is crispy.
- In a small bowl combine the soy, water, sesame oil, chili paste and garlic. Add toe the rice and cook until absorbed.
Comments: The secret to good fried rice is starting with cold cooked grains!!!
