Mediterranean Lamb Burgers

Ingredients

  • 1 ½ pounds ground lamb
  • 1/2 cup chopped kalamata olives
  • 1/4 cup feta cheese
  • 3 tablespoons chopped parsley
  • 6 large garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 4 egg whites
  • ⅓ cup of panko, mixed in with the lamb and egg whites
  • 8 buns
  • ½ cup mayo and ½ tsp of cayenne

Instructions

  1. In a large bowl, mix all ingredients except the buns.
  2. Preheat the cast iron pan or grill pan to medium heat (350°) using the laser thermometer. 8 minutes
  3. Cook on direct, medium heat for 4 minutes and flip when cooked to the amount you want
  4. Cook on the flipped side for 4 minutes
  5. Remove and tent for 5 minutes
  6. Spread the mayo/cayenne mixture on the buns, top with burger and VIOLA!
