Ingredients

• 3 cups flour
• 3 eggs
• 1 tablespoon oil
• 1 bunch spinach, cleaned, steamed and well-drained.

Instructions

1. Measure the flour into the processor bowl, add the spinach and process for 30 seconds.
2. In another bowl, lightly beat together the eggs and the oil. Pour this mixture through the feed tube gradually with the machine running. Add enough of the liquid until the mixture beads and will hold together if pressed with your fingers.
3. I like to let the dough come together in a ball and kneed it for another 30 seconds.
4. Remove the dough and shape into an oval and cover with Saran. Let rest for 20 minutes.
