Ingredients
- 1 pound large shrimp
- Cooked rice
For the Sauce
- 1 pound package frozen mango chunks
- 2 tablespoons mayo
- Zest of one lime
- 1 tablespoon tequila
- 2 teaspoons minced jalapeno
- ¼ teaspoon salt
- Pepper
Marinade
- 3 tablespoons tequila
- Zest of one lime
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon Tabasco
Instructions
- In a processor combine half of the mango chunks and the rest of the sauce ingredients. Process until smooth. Chill.
- In a small bowl mix the marinade ingredients and add to the shrimp and reserved mango. Marinate a room temperature for 10 minutes.
- Thread onto skewers and grill. Serve over rice.
