Tequila and Lime Marinated Shrimp with Mango Sauce

Ingredients

  • 1 pound large shrimp
  • Cooked rice

For the Sauce

  • 1 pound package frozen mango chunks
  • 2 tablespoons mayo
  • Zest of one lime
  • 1 tablespoon tequila
  • 2 teaspoons minced jalapeno
  • ¼ teaspoon salt
  • Pepper

Marinade

  • 3 tablespoons tequila
  • Zest of one lime
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon Tabasco

Instructions

  1. In a processor combine half of the mango chunks and the rest of the sauce ingredients. Process until smooth. Chill.
  2. In a small bowl mix the marinade ingredients and add to the shrimp and reserved mango. Marinate a room temperature for 10 minutes.
  3. Thread onto skewers and grill. Serve over rice.
