Ingredients
- 1 four pound chicken cut into pieces
Marinade
- 2 teaspoons curry
- 1 teaspoon turmeric
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup coconut milk
- 3 tablespoons minced cilantro
- 3 tablespoons minced garlic
- 3 tablespoons minced onion
- 1 tablespoon sugar
Apricot Sauce
- ½ cup apricot jam
- ¼ cup apricot nectar
- 1 teaspoon chili sauce
Instructions
- Combine marinade ingredients and rub into chicken. Marinate in fridge at least four hours or overnight.
- BBQ per instructions. Heat apricot sauce ingredients until blended.
