Ingredients

  • 1 four pound chicken cut into pieces

Marinade

  • 2 teaspoons curry
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup coconut milk
  • 3 tablespoons minced cilantro
  • 3 tablespoons minced garlic
  • 3 tablespoons minced onion
  • 1 tablespoon sugar

Apricot Sauce

  • ½ cup apricot jam
  • ¼ cup apricot nectar
  • 1 teaspoon chili sauce

Instructions

  1. Combine marinade ingredients and rub into chicken. Marinate in fridge at least four hours or overnight.
  2. BBQ per instructions. Heat apricot sauce ingredients until blended.
