Tomato Chipotle Sauce

Ingredients

  • 2 tablespoons oil
  • 1 onion, chopped
  • 3 large tomatoes or 1 can stewed tomatoes drained
  • 4 garlic cloves
  • 1 whole chipotle chile and 2 tablespoons adobe sauce that it comes in

Instructions

  1. Heat oil and add onion. Sauté until very brown or about 5 minutes.
  2. Add tomatoes, garlic and chilies and sauce and cook one minute.
  3. Transfer mixture to blender and puree until smooth. Season with salt and pepper.

Notes

  1. This is a very versatile sauce that can be used as a salsa (since REAL salsa is not chunky but smooth) as a topping for grilled fish, chicken, on burritos, with anything Mexican.
